PLANT VS. POWDER
While the commonly known "Breakfast Zahter" is a spice mix containing watermelon seeds and chickpeas, the "Fresh Zahter" in our archive refers to the green leaves hand-picked from the wild. It grows through waterless rocks and soil-less grounds which force its way into existence.
RITUAL
The ritual of "Fresh Zahter Salad" combines fresh leaves, virgin olive oil, pomegranate molasses, and Aleppo pepper. This mixture serves as a healing ritual for the people of Antakya and many more.
WOODY SHARPNESS
It has a much more aggressive and distinct character than greenhouse thyme. It’s woodier, more resinous, and sharper. If you rub it between your fingers, the scent lingers for hours. That’s just proof of how potent the essential oils are.
