Sürk Cheese

SCULPTED RED

Surk is shaped by molds or the warmth of the palm of the hand. As it dries in the sun, its outer shell darkens and hardens through oxidation; however, when struck with a knife, the vibrant, moist, and soft core that we call "Surk Red" is revealed.

RITUAL

Sürk cheese is too tough to eat on its own; it tires the palate. What tames it is the extra virgin olive oil drizzled over it. When thinly sliced ​​or crumbled, the oil penetrates the cheese's pores, softening the tough texture and awakening the dormant aroma of the spices. Without warm tandoor bread and tea, this ceremony is incomplete.

SPICY PRESERVATION

In the days before refrigerators, Sürk cheese relied on spices to prevent spoilage. On one hand, thyme, cumin, allspice, and red pepper paste added flavor, while on the other, they formed an antimicrobial shield protecting the cheese from external threats. Sürk is a culinary alchemy where cheese is "immortalized" through fermentation with spices.
