Halhalı olive is defined by character, not size. Though small, it is surprisingly oily. Its identity shows in the bite: the flesh leaves the pit with an effortless, characteristic "pop" sound. Always crisp and firm, never mushy.

RITUAL

In Antakya, an olive is rarely served alone. It’s the base for a riot of flavors. Pitted Halhalı is tossed with wild zahter, crushed walnuts, and a heavy pour of pomegranate molasses. It’s a messy, beautiful collision of sour, green, and earth.

SURVIVORS OF TIME
