RUSTIC AMBER
Hıristilloz
THE LOOK
It usually consists of bright yellow layers on the bottom and vibrant red or pink layers on top. It is cut from large blocks with a knife and eaten by hand between paper.
INGREDIENTS
Semolina, sugar, and water. Sometimes a very small amount of rose water is added. It's cooked in a pot and then frozen in a tray. Its texture is somewhere between halva and jelly; neither too hard nor too soft.
STATUS
Once found at street vendors every school exit, Hıristilloz is now only kept alive by a few old masters in Uzun Çarşı. It's a "street joy" on the verge of being forgotten.
